A once nearly lost heirloom corn finds its way back to the table in Marsh Hen Mill’s Jimmy Red Grits. Stone-ground on Edisto Island, South Carolina, these red-flecked grits have a rich, nutty flavor with natural sweetness and hints of toasted pecan. Cook them into a comforting bowl with butter, stir in sharp cheddar, or make them the foundation for shrimp and grits. Each bag connects a Southern kitchen staple with the work of bringing an old corn variety back into cultivation.

Why We Chose It

There’s a Reason It’s Here.

Jimmy Red Grits bring both flavor and a story of revival to our pantry. Greg Johnsman spent eight years cultivating this once nearly lost corn variety, making these grits a meaningful example of how today’s makers keep American food traditions alive.

Meet the Maker

A Nearly Lost Corn, Back at the Southern Table

Marsh Hen Mill began in 2007 on Edisto Island, South Carolina, originally under the name Geechie Boy Mill. Founder Greg Johnsman learned traditional milling from third-generation miller Jack Brock and started the business with restored 1945 milling equipment. Today, the mill carries that craft forward through stone-ground grits, cornmeal, and heirloom grains rooted in Southern food traditions.
